The Role
The Executive Chef drives culinary excellence across the entirety of the business by defining and executing standards for Bar Vegan + Slutty Vegan, recruits and builds a culinary team, and drives a high-quality seasonal, sustainable, innovative, and vegan wellness-focused menu. Directly reporting to Executive Leadership, the role will oversee all culinary teams on-premises. The Executive Chef leads and represents the culinary program and is responsible for the overall success of the day-to-day operations of all Bar Vegan + Slutty Vegan teams and kitchens.
Responsibilities & Requirements
- Strong candidates should have a background in culinary leadership and execution in high-volume and vegan concept-forward kitchens. A strong emphasis is placed on candidates' ability to train and motivate teams to take pride in products and excel beyond standards and expectations.
- 4+ years of experience in vegan concept-driven kitchens.
- Drive internal teams to meticulously manage the physical appearance and behind-the-scenes operations of a first-class cultural institution.
- Training, development, and mentorship of in-house teams to ensure the maintenance of recipes, portion specifications, and standard preparation procedures for all dishes and ensure that all culinary team members are following these standards.
Menu & Concept:
- The Executive Chef leads and represents the culinary teams and program and is responsible for the overall success of the day-to-day operations of the Bar Vegan + Slutty Vegan kitchens.
- Through training, development, and mentorship of in-house teams, they ensure the maintenance of recipes, portion specifications, and standard preparation procedures for all dishes and ensure that all culinary team members are following these standards.
- Ensure kitchen operations can run smoothly and efficiently with a mind toward customers, as well as employee experience.
Financial Management:
- The Executive Chef will require financial acumen to support the culinary arms of the business units.
- Oversee vendor management & negotiation, company invoice tracking, food cost management, labor cost management and inventory control.
- Analyzes weekly/daily menu item analysis to understand sales, with guest preferences in mind.
- Preparing operational & sales reports and analyses setting forth progress, adverse trends, and making appropriate recommendations for menu success.
- Determination of purchasing specifications and budgetary allotments for all menu items.
- Ensure all expense control/forecasting systems are in place with close monitoring of all department expenses including revenue to payroll ratio.
- Read, plan and communicate culinary elements of all Bar Vegan + Slutty Vegan F&B outlet’s P&L statements in collaboration with Executive Leadership.
Health, Safety & Team Management:
- Maintain complete knowledge of and compliance with all Health & Safety, company Employment policies/service procedures/standards as these relate to the kitchen and culinary team.
- Implement all DOH requirements and HACCP safety programs across all kitchens.
- Coordinate hiring and training activities for the kitchen and other production and back of house employees while continuously monitoring their performance.
- Is present in the kitchen with the team during prime service periods and is working in the kitchen/prep for a majority of their scheduled time.
- Provides the Bar Vegan General Manager schedule advice on a weekly basis for culinary teams.
- Leadership and development of talent on our kitchen teams.
- Guide, develop, and implement operational excellence decisions that become scalable SOPs for restaurant development, new concept development, and/or F&B changes within the restaurant. Be prepared to outline policies, procedures, and systems to improve our business, service, retention, and magic of the Bar Vegan + Slutty Vegan experience.
